These roast beef sliders with savory caramelized onions, ooey gooey cheese, and garlicky rolls are the ultimate party food!
You really gotta love fall. The leaves change into beautiful shades of reds and oranges, the weather cools down to the perfect crisp sweater season, and football starts!
My favorite part of football season may shock you…not. It’s the food! Game day food is the best and these roast beef sliders are the perfect addition to your tailgate.
Preheat oven to 350°.
Caramelize some onions by thinly slicing them and cooking in a pan over a low heat.
Vic Trick: Keep the lid on the pan to sweat the onions out and soften them, then remove the lid and raise the heat to get them nice and golden.
Add a tbsp of Worcestershire sauce once they’re cooked to add that yummy umami flavor.

Then it’s assembly time!
Take some Hawaiian rolls, slice them lengthwise, and place them into a pan grease with cooking spray.
Vic Trick: The half sheet aluminum foil pans are the best for these because the 12 rolls fit PERFECTLY.

To the rolls, layer on some sliced, rare roast beef. Then top with the caramelized onions. Followed by slices of provolone.

Mix together 2 tbsp melted butter, 2 cloves of minced garlic, and a tsp of oregano. Place the top buns and baste with the garlic butter.

Wrap the top of the pan in foil and bake the sliders at 350° for 10 minutes, then remove the foil and bake for another 10 minutes or until the buns are golden and the cheese is melted.

And that’s it! The yummiest roast beef sliders perfect for your next potluck or tailgate!
