
When I die, just bury me in dulce de leche cookies.
Honestly, death by dulce de leche sounds right up my alley. Like drown me in it plz.
Anyway, to the surprise of no one, I have created yet another super simple cookie recipe.
And also to the surprise of no one, it uses Vic’s Tricks To…The STAPLE Vanilla Cookie Dough.
These are so good, you’re going to find any reason to make them. Like Valentine’s Day!
Preheat oven to 350°.
Make Vic’s STAPLE vanilla dough:
Take 1 cup sugar and 1 cup softened butter and mix until completely combined and kinda fluffy.

Add in an egg and 2 tsp of vanilla and mix until combined.
In a separate bowl, combine 2 and 3/4 cup of flour and 1 tsp of baking powder, then add that mixture, 1 cup at a time, until mixed. It will be pretty stiff.

Empty the contents out onto some parchment and use your hands to bring the dough together into 3 balls. Then press down to form them into disks.


Roll each disk into a 1/4 thick sheet and set aside in the freezer for 10 minutes.
Remove from the freezer, cut into your desired shape, and bake in the oven for 10-12 mins or until the edges turn golden.
Vic Trick: You’ll want to make an even number, since you’ll be using two to make each sandwich.

Let cool completely, then spread a generous amount of dulce de leche on the underside of a cookie. Add a pinch of flaky sea salt.

Vic Trick: there are a lot of cool ways to make your own dulce de leche, but I buy mine ready to go in a can. You can find it near the condensed milk in the grocery store.
Use another cookie to sandwich the dulce de leche and repeat with the remaining cookies.

Next, melt 12oz semi-sweet chocolate over a double-boiler (a glass bowl over a pot with an inch of simmering water).

Vic Trick: You’ll want to stir the chocolate frequently and remove the bowl from the heat source when it’s about 80% melted. Continue to stir until entirely melted. You never want the chocolate to be hot to the touch.
Dip each cookie halfway into the chocolate and set aside to a parchment-lined baking sheet or wire rack. Repeat with each cookie.

Optional: You can sprinkle another pinch of salt on the chocolate if you like a salty/sweet combo. This cookie is VERY sweet, so you’ve got room to play around.
Let the chocolate set for at least 2 hours (place into the fridge to speed up the process) and that’s it!

- Let cool completely, then spread a generous amount of dulce de leche on the underside of a cookie and add a pinch of flaky sea salt. Use another cookie to form a sandwich and repeat with the remaining cookies.
- Melt 12oz semi-sweet chocolate over a double-boiler (a glass bowl over a pot with an inch of simmering water) and dip half of each sandwich into the chocolate. Add another pinch of salt if desired and set aside until the chocolate has set, about 2 hours at room temperature (can put in fridge to speed up).
- Enjoy your delicious salty/sweet/rich amazing cookie!
