So, I’m taking a step back and going back to basics with a few of my all-time favorite recipes.
To start us off, we’re going to run through some of my TIPS… (get it?) around how to make the most delicious steak tips.
The funny thing is…you’ve known all along….
Vic’s Tricks To…The Most Bombtastic Steak Marinade
has been out since February of 2017!!!
This is still my tried and true marinade that I use for any flank or skirt steak. And steak tips of course!
When you buy sirloin tips at the store, they usually come in long strips. To make them into tips, just cut them into chunks! Do this BEFORE you marinade and let it sit in the marinade for at least like 4 hours, but ideally overnight.

When you cook the steak tips, you’ll want them in a large pre-heated pan (I LOVE my cast iron for this) and cook them until your desired doneness. I usually prefer them medium rare and that takes about 7-8 minutes. But, of course it will vary given the size of the steak tip.
Vic Trick: Don’t just dump the steak with the marinade into the pan. All that juice is going to make the meat steam instead of getting a nice char. Instead, pull the meat out with tongs and shake off the extra sauce before placing it in the pan. Then, once it’s browned on all sides, add back in the remaining marinade and cook it for about 5 minutes. This will make a delicious sauce too!
It’s important to not overcrowd the pan with too much meat either. Cook them in batches if necessary.
Once they’re cooked, your options are LIMITLESS!
You can throw them on a salad, eat them with some veggies, or maybe even top them over some cauliflower (or classic) risotto! Just search risotto on vicstricksto.com to find both recipes!

- 2 tbsp of ginger
- 1 tbsp of lemon juice
- 4 cloves of smashed garlic
