
I am literally always looking for a bomb steak sauce or topping.
I am obsessed with steak and have it like once every two weeks minimum, so I take my sauces v seriously.
Obvs one of my all-time faves is

But, it’s looking like this Radish Top Chimichurri may be creeping up the list.
Not only is chimichurri just a bomb steak sauce, but I am ALWAYS using radishes.

And as I attempt to be more responsible and reduce my waste, I thought…why not use the radish tops too!
Radish tops are bitter greens and oh so delicious – PERFECT for a chimichurri.
Oh, and it’s the easiest thing ever…
Vic Trick: This recipe is using the greens from 2 bunches of radishes which is about 2 servings of sauce. For 1 steak, use 1 bunch and cut the remaining ingredients in half.

I mean how cute are the radishes on the radish cutting board!!!!
PSA: this is not a traditional chimichurri, but it’s good so deal with it.
Remove the greens from the radishes and rinse them well in a bowl of cold water to remove the dirt.

Drain the water and and rinse it out. To that same bowl, (because we loveeee a minimal mess!), add 3 cloves of minced garlic, a diced chile pepper, 2 tbsp red wine vinegar, and a pinch of salt & pepper.
Dice the radish greens finely, but not too much that they form a paste. Just run the knife over a few times. Rustic is good here.

Add the greens into the bowl and whisk in about 1/4 cup of olive oil.
Vic Trick: The consistency is kinda up to you – if you want it super herby, use less oil. If you like it more saucy, use a little more. Just add it slowly!!! It’s hard to take it back once it’s done.

And of course…TASTE IT! Add more salt if you need!
And that is it!!!
Typically you’d do this while your radishes are roasting and your steak is cooking perfectly according to Vic’s Tricks To…The Perfect Seared Steak.

You can also put this on chicken or pork or even use it as a marinade!!!

Vic’s Tricks To…Radish Top Chimichurri
Ingredients
- 2 bunches of radish greens (the tops of the radish bunch OR 1/2 cup parsley)
- 3 cloves garlic, minced
- 1 chile pepper, diced
- 2 tbsp red wine vinegar
- Salt & pepper
- 1/4 cup olive oil
Instructions
- Remove the greens from the radishes and rinse them well in a bowl of cold water to remove the dirt.
- Drain the water and and rinse it out. To that same bowl, add 3 cloves of minced garlic, 1 diced chile pepper, 2 tbsp red wine vinegar, and a pinch of salt & pepper.
- Dice the radish greens finely and add into the bowl. Slowly whisk in olive oil.
- Serve over your favorite steak or use as a marinade!
