Vic’s Tricks To…Prosciutto-Wrapped Asparagus

Asparagus is a top 5 favorite veggie for me. Add prosciutto and I’m all in.

It’s my GO-TO for when I’m having fish, especially since I usually make my fish nice and spicy. See: Vic’s Tricks To…Blackened Salmon.

But, keeping along with our theme of Thanksgiving-esque dishes, I decided to prepare one of my favorites.

Prociutto-Wrapped Asparagus!

These are always a hit during all times of year, but I swear they will for sure be the talk of your Thanksgiving table.

And the best part… SO EASY!


Preheat oven to 450°.

Cut the yellow ends off the asparagus and toss them in a bowl with about 2 tbsp of olive oil, 1/4 cup of grated parmesan cheese, 1 tbsp garlic powder, and a pinch or two of black pepper.

Vic Trick: DO NOT ADD SALT. The salt in the parmesan and prosciutto is more than enough to flavor the asparagus. Adding salt would be a death sentence!

Then, in bundles of 3, wrap the sliced prosciutto around the asparagus, starting at the bottom and working your way up as you wrap.

Place the bundles onto a parchment lined baking sheet and bake for about 10 minutes. Then flip them over, and cook for another 10-15 minutes or until you’ve reached your desired level of crispiness.

Sprinkle with some more parmesan and you are DONE!

Vic Trick: These could totally be made ahead, then reheated back in a 400° oven for about 5 minutes so it can crisp back up.
