Vic’s Tricks To…Sausage & Spinach “Pasta” Sauce

This Sausage & Spinach Pasta Sauce will change your weeknights forever.

I found myself in a very familiar yet difficult situation the other night…

I had a bunch of crap in my fridge, but no idea what to make.

I mean, who can relate? I feel like this happens to me alllll the time.

The safest thing you can do in this scenario is cook up a bunch of stuff, add some liquid of some form, and make a quick sauce. Then you can top it over pasta or rice or zoodles or whatever and you’re good to go.

For this go-around, I had: sausage, spinach, cauliflower, canned tomatoes, shredded cheese, and cream cheese.

Vic Trick: I’m pretty lucky I had the cream cheese on hand to give it some creaminess, but butter would have also worked just fine.

You can pretty much take the approach I’m about to lay out for any of these “throw things together meals.” The formula is:

Brown meat first > Saute veggies > add cream/broth > add “starch” > add cheese

I’m telling you, that’s it. Super simple once you break it down like that, huh?

BTW – when I say “starch” I mean any form of pasta, rice, potato, or veggie. For instance, I used cauliflower rice here.

I’ll walk you through this specific example below, but don’t forget the formula!


Preheat oven to 450° and roast cauliflower until it gets nice and tender.

Remove sausage from the casing and break up in a cast iron pan over medium high heat, until all the sausage is browned.

Add in the spinach and saute until wilted, about 2 minutes. Then, add the entire can of tomatoes and let it simmer in the pan for another 4 minutes.

Add in the cream cheese (or heavy cream or chicken broth would both work fine too). Let it melt and combine with the tomato juice and form a nice delicious creamy sauce.

Add in the cauliflower rice (or “starch” of your choosing) and mix it all together, getting the sauce nice and dispersed throughout.

Top with cheese and throw it under the broiler until nice and melty and delicious. Scoop into bowls and that’s it! Sausage & Spinach Pasta Sauce!
