
Those who know me know I’m all about eating clean and healthy…
OK, so maybe not exactly… but I try to be healthy when I can. OK! Jeez.
But I gotta say, I have a huge weakness for NACHOS.
With chili or spicy ground beef and cheese alllllllll over me…I mean it…I mean what?
Anyway, in an attempt to make my favorite food a little bit healthier, I came up with these Turkey Mini Pepper Nachos.
They’re super easy, although require a bit more manual labor. But remember your health!!!
First, prepare the mini peppers by cutting them in half longways and emptying the insides. Set aside.
For the filling, I stick with ground turkey because it’s exponentially better for you than beef. And the taco packets help add a ton of flavor.
Prepare the turkey the way it’s directed on the back of the seasoning packet. Then, arrange the peppers on a parchment lined sheet tray and stuff them with as much filling as possible.
Top with cheese and place into 400° oven for 10 minutes.
The peppers should be nice and soft by then, but leave them in for as long as you desire.
Serve with quac and salsa and whatever else you enjoy on your ‘chos.

Vic’s Tricks To…Healthy Mini Pepper Nachos
Ingredients
- 1 package mini peppers
- 1 lb ground turkey
- 1 taco seasoning packet
- 1 1/2 cups shredded Mexican blend cheese
- Guacamole, salsa, or whatever you desire for toppings
