HA HA, ok ok, settle down. I’m kidding. BUT, I am trying to be better (good luck, right). However, there is one thing I will never give up…and that’s dessert.
That’s right. Dessert is everything to me.
So, if I’m going to attempt to “be better” – I’m gonna need somethin’ sweet…
Cue, CHIA SEED PUDDING.
Chia seeds are wonderful for you, packing more calcium than milk, more antioxidants than blueberries, and more Omega-3s than salmon! Plus, they expand and gel in liquid – filling up that giant abyss I call my stomach!
As a BIG tapioca pudding fan…I knew this might just be crazy enough to work…

This tasty and super-healthy pudding was SO easy to make. To make it work, all you need is coconut milk and chia seeds. But, I’d recommend some flavor – healthy doesn’t have to equal boring! I added vanilla, cinnamon, and sugar. I didn’t have maple syrup or honey on hand, but I could imagine that would be D-E-L-I-C-I-O-U-S. Or you could add some fruit for some extra health/tastiness. Cocoa powder could have been amazing too – can’t go wrong with chocolate pudding!
