For those of you who don’t know me or read my posts – I’m known to be a liiiiittle lazy.
I, however, prefer to call it efficiency.
And this recipe pays homage to exactly that….
I’m talkin’ 4 ingredients. One tray. No cleanup.
I know what you’re thinking. “Vic – you’re pullin’ my leg again!” ….OK – so maybe if you’re under the age of 65 you’re probably not thinking that.
Anyway, this is the perfect dinner for the “lazy/efficient/had-a-long-day-but-I’ve-been-doing-relatively-decently-on-my-diet” folks.
You are my brothers and sisters and we must stick together! THIS. IS. SIIIIIMPLE!
Are you ready for the most simple yet delicious dinner of all time? Same. Let’s get on with it shall we….
First, preheat your oven to 400°.
Then, grab a rimmed sheet pan (which is different than a baking pan/sheet as it has deeper edges – got to keep those juices in there!) and line it with aluminum foil (hint: no cleanup).
Vic Trick: Put the sheet pan into the oven while it preheats, then place the chicken thighs skin down onto the pan once it reaches 400°. This will keep the skin nice and crispy and will provide tons of delicious fat to cook the potatoes…mmmmm!

Spread the chicken thighs and potatoes on the preheated baking pan and sprinkle with minced garlic, Italian seasoning, and salt and pepper. Put the rack back in the oven and cook for about 20-25 minutes or until the chicken skin is crispy and the potatoes are tender. (Poke them with a fork and if they give rather easily, they’re ready).

But that is literally it! SERVE AND ENJOY, MY FRIENDS!
PS – sometimes I’ll add some broccoli or asparagus to the tray as well, but I was a little strapped for resources at the time (hadn’t grocery shopped that week *eye roll*)…. So I ate the chicken with potatoes one day, then with rice the next – both equally AMAZING.
