WINNER WINNER EASY CHICKEN DINNER!
If you haven’t picked up on it yet, I’m a tad lazy. I like to see it as working smarter, not harder. Part of my mission in creating Vic’s Tricks To… was to make simple, easy meals that anyone can make after a long day of work (or play).
Laziness is an epidemic, and I’m here to equip you with the tools you need to combat it.
A PSA to kick off this easy meal: if there’s one kitchen product that I would give up anything for, it’s aluminum foil. That’s why it’s the number 1 on the Vic’s Tricks List.
This incredible tool can be used in a multitude of ways – my favorite being an easy clean-up (see: lazy). But in this easy dinner’s case, the foil acts as a mini steam packet, delivering the most tender, juicy chicken breasts.
These packets are perfect for the grill, but can also be used in a oven. The concept remains the same: pack chicken breasts, herbs, spices, veggies, and/or citrus into an aluminum foil packet, throw over some heat, and enjoy.
For this example, I used tomatoes, basil, oregano, and salt and pepper. I placed the chicken in the center of the foil sheet, folded in the sides tightly, threw them on the grill (or in the oven), then BOOM. Delicious, tender chicken. Throw it over some pasta and you’re done.
Pretty simple right?
Then, I took it to the next level and made a quick sauce by adding the juice from the chicken packets to about 2-3 tablespoons of butter in a saucepan.
YUM! It came out delicious and took absolutely no work.
It’s like a dream come true…
And it doesn’t end there! There are unlimited options when it comes to the spice/herb/veg mix.
Some of my favorites are:
- Taco seasoning (chili powder, adobo, cumin), bell peppers and an onion
- Lemon, rosemary, red pepper flakes, red potatoes
- Roasted red peppers, olives, artichoke hearts, lemon
- Butter, garlic, Italian seasonings, asparagus
And the list goes on!
Just trust me and give it a try – just throw some herbs on some chicken, add some sort of liquid via citrus or veggie, and sit back and enjoy your creation!
